Yogurt Waldorf

Apple(2-3 servings)
¼ c (handful) walnuts
¼ c (handful) rasins and/or red seedless grapes halved
2-3 celery stalks chopped
1-2 apples diced
1 container yogurt (strawberry/rasberry work well, as does YoBaby) (or ½ container yogurt + 1T canola mayonase)
Salt & Pepper
Mix all ingredients – serve over a bed of mixed greens, arugula or baby spinach

My Valley moment last week happened as we were leaving for a tumbling class. We were running late and my 2 year-old wanted to bring her little pink toy stroller to class. It’s always a slower walk when she’s pushing her stroller so I said no.  Her tantrum was so loud that a neighbor came out into the lobby to see what was going on as I was trying to put her jacket on.  Then it was a battle to get her into her stroller and she screamed and thrashed the entire two blocks to class. Once we got there it took her a while to calm down and for me to stop sweating!  Not worth it, definitely would have been faster and less stressful to let her win this one.

Peak

My Peak moment was at the library. We are fortunate to spend some winter weekends outside the city in a town called Washington Depot, CT.  They have a wonderful library called the Gunn Memorial.  Every weekend they have arts and crafts for the kids.  This weekend for Valentine’s day they had all the hearts out.  My two-year old went right for the glue sticks and my four-year was doing a craft with beads.  Just watching them get so involved was precious. One of those moments to savor. Then my older one looked up and said, “I Love You, Mommy.”  Doesn’t get any better than that.
