Family Snack: Ants on a Snowboard

Quick Couscous with Broccoli Rabe

Apple(2-3 servings)
¼ c (handful) walnuts
¼ c (handful) kalamata olives
1/2  head broccoli rabe blanched & chopped
2 cloves garlic
1 shallot
1 box couscous

Cook couscous according to box directions. Meanwhile, sautee garlic and shallot for about a minute. Add olives, walnuts, broccoli rabe to fry pan till warm. Mix all ingredients. Serve.

Focus Food: Broccoli Rabe

Broccoli rabe is a source of vitamins A, C, and K, as well as potassium, calcium, and iron.  Iron is super-important for carrying life-giving oxygen to our blood cells.

Broccoli rabe is available all year long, but its peak season is fall to spring.

Giraffe Food from Laughing Giraffe

My 3-year old asked: “Daddy, Why do we have giraffe food in here?” when she saw the label on the vanilla almond macaroons.

It was so funny – but seriously, these are yummy!

My Valley moment was last night… the whole night. When you have 3 kids under four, you just have to expect that some nights, everyone will be up.  My baby was up at 11, 2-ish, and 5 to eat. My two-year old needed her paci around 1, and at 4:15 my three-year old needed her blanket put back on.  The silver lining? – they all went back to sleep quickly, and slept till 7:30.


My daughter turned two this weekend. At her party we were ready to open presents and no one could find her… Finally, we found her and one of her playmates in the master shower.  I overheard him ask her, “What’s that?”  She replied, it’s the “Shoap.” – She uses the “sh” sound for most “s” sounds these days. Which is kind of funny when she says “sit”…



Packing List
