RECIPE

Bread-Eggs Morning or Night

Ingredients:

Bread, eggs, butter

RECIPE

Omelet

Apple(2-3 servings)
1-2 Garlic cloves, minced
a few mushrooms, sliced
handful spinach roughly chopped
2 eggs
cheese
S&P to taste
EVOO

Heat EVOO in pan. Sautee garlic and mushrooms for a minute or two, add spinach. Cook till wilted. Add eggs and cheese. Scramble until done. Serve (with hot sauce if you like it spicy)

Focus Food: Eggs

Good source of protein, essential amino acids and vitamine D. Get them hormone free, organic and preferably locally.  Enjoy hard or soft boiled.

PEAKS & VALLEYS:

Valley

Many milestones come with mixed emotions.  On the one hand it’s challenging to see them growing up so fast and I wish I could freeze time, but on the other hand it’s so exciting to see the next phase of development.  This week I went through one of the most emotional transitions for me. I stopped breast feeding my little guy.  I miss being able to hold him and comfort him in that special way but at the same time I want to get my body back and the liberation is nice.  I feel very blessed to have been able to do it for almost 7 months this time around.

Peak

Bath time is always a highlight of the day for me.  No matter what is going on before hand, whether everyone is playing nicely, or fighting, or having more pasta sauce on their face than in their mouth – bath time calms everyone.  This week was particularly fun because it was the first time I put all three in together. So cute!
