Fun Feta Pita

Main Ingredients:

Pita pocket, cucumber, feta.



1 hothouse cucumber, cubed
2 medium tomatoes, cubed
1 yellow or orange pepper, diced (optional)
1/2 red or yellow onion, diced
1 clove garlic, minced
1 ear corn, cooked or raw, cut kernels off
bunch cilantro, chopped (you can omit this or substitute with parsley)
1 avocado, cubed
1/2 lemon or lime, juiced
1-2 small 8oz cans spicy V8 (optional)
Salt & Pepper

Mix all ingredients, put half in blender with enough water or tomato juice to just cover the veggies. Blend. Remix with other half for chunky gaspacho or blend all for a smoother textured soup.

Chill and serve cold or at room temperature with sliced avocado or cilantro sprig on top.

Focus Food: Cucumber

Cucumbers are a low calorie food with a nice crunch.  They have about 5% of your daily vitamin C requirement.

Try adding sliced cucumber to a glass of ice water to feel like you’re having a spa moment at home.

Hands down the low-light of the week was my little Muffin (my 2 year-old) having the throwing up virus.  She gets hit hard when she’s sick and was just so out of it. Luckily I was able to work from home and so far the others haven’t gotten it – but boy is the stomach bug gross and so sad!


My husband got home late Wednesday night from a week of triathlon training in Tucson.  I was so happy to have him back!  It was precious to see the girls run into our bedroom in the morning and realize he was there, “DADDY!!!”  And our little “Tugboat” of a 7 month old couldn’t wait to get in the mix with a big wet open mouth kiss for Daddy too.


Slow to anger…
