Simple Salad

cucumber feta pita

Main Ingredients:

Baby greens, walnuts, dried cranberries, feta.


Banana Bread


3/4 cup coarsely chopped walnuts (3 ounces)

1 1/4 cups unbleached all-purpose flour (I sometimes replace 1/4 to 1/3 with whole wheat flour)

1 teaspoon baking soda

1/2 teaspoon cinnamon

1/2 teaspoon salt

1 cup sugar (I use organic cane sugar)

2 large eggs

1/2 cup canola oil

3 medium overripe bananas, mashed (1 1/4 cups) (I use anywhere between 2-4 bananas the more ripe – brown on the outside skin the better)

1 teaspoon pure vanilla extract (using good vanilla makes a big difference)

  1. Preheat the oven to 350°. Coat a 9-by-5-inch loaf pan with cooking spray.
  2. Spread the walnuts in a pie pan and toast until fragrant; let cool.
  3. In a medium bowl, whisk the flour with the baking soda, cinnamon and salt.
  4. In a large bowl, combine the sugar, eggs and oil and beat at high speed until light-colored and creamy. Add the mashed bananas and vanilla and beat until smooth, leaving some banana chunks. Stir in the dry ingredients a bit at a time until thoroughly blended. Fold in the nuts.
  5. Pour the batter into the prepared pan and bake in the middle of the oven for 50 to 60 minutes, or until the top is springy and a cake tester inserted in the center comes out clean. Let the loaf cool in the pan for 10 minutes before turning it out onto a rack to cool completely.

MAKE AHEAD Wrap the bread tightly in plastic and refrigerate for up to 5 days or freeze for up to 2 months.

Focus Food: Walnut

Walnuts have significantly higher amounts of omega 3s than other nuts.  They are also rich in fiber and B vitamins.

If you eat them raw, they are actually pretty sweet. My girls and I sometimes eat them as a snack with dried cranberries.

This week’s valley: flying to LA on Tuesday morning and taking the red-eye back Wednesday night. Going away for work is always a mixed blessing – nice to travel alone & have a cup of tea, read a book on the plane – but I miss the little ones so much.


Being helping parent at my daughter’s pre-school is awesome. Especially watching the kids interact – when they are polite to each other – sharing toys or especially having a dance party with instruments and scarves.
