Yummy Guacamole

snack video

Avocado, tomato, lemon, garlic powder.

Southwest Salad

1/2 avocado
1/4 c corn – 1 ear if fresh, or canned
1/4 c black beans
1 T red onion, minced
6 cherry or grape tomatoes, chopped
handful cilantro (if you like it)
1/2 lemon or lime, juiced

Mix all ingredients. Season with sea salt and pepper. Put in fridge for a half hour or longer to let flavors combine. Serve over baby greens.

Focus Food: Avocado

More than half of an avocado’s calories come from the “good” kind of fat (monounsaturated).  They have 60% more potassium than bananas and are rich in B vitamins.

I also like to use avocado as a substitute for cheese on sandwiches.

Chew, chew, chew

  • Your stomach doesn’t have teeth – or so the Chinese proverb goes
  • They say to chew your food 35 times before swallowing it – try it.

Shopping Bag

I love the lululemon headbands. They don’t slip and they are comfortable. Great colors.

At least if I can’t find the time to go to yoga – my headband can remind me to breathe deeply.

Meet your Meat

Only click this link if you’re prepared to become vegetarian. It’s pretty gross, pretty compelling: meet your meat.

Being back at work after a six month break I notice a lot of differences.  Yesterday I saw some twenty-somethings walking to the cafeteria and I thought, “Oh G*d, I’m OLD”.  They looked so young, too young to be working and then I thought, I have three kids, I’ve been working for almost 20 years!  I have to remind myself of what my grandma always says, “Old just keeps getting older.”

I just got home from tap & ballet with my four year old daughter and my two year old was playing quietly on her bed.  Julia, our amazing sitter, said, “She’s having some nice quiet time.”  A moment later she looked up at me sort of surprised that I was there and ran to me. She gave me a BIG hug and said, “Mommy, Puzzle?” Sure sweetie, I’d love to play!

To whom much is given…

Much is expected.
