Pizza Two Ways


Main Ingredients:

Tortilla, bread, sauce, cheese 



1 tortilla
1/2 zucchini, sliced in 1/4 inch rounds
2-3 tablespoons hummus
olive oil & pepper
grated mozarrella and parmesian
handful toasted pine nuts

Spread hummus on tortilla (or pizza crust). Top with a single layer of zucchini slices.  Place in 325 oven for ~5-7 minutes. Remove, drizzle with olive oil, sprinkle with pepper and some of each cheese to cover. Heat until the cheese is melted. Squeeze some fresh lemon juice over the pie and top with toasted pine nuts.
Focus Food: Zucchini 

Zucchini is low in calories and a good source of vitamine A and folate. – Green is Good.

My favorite tea is Yogi Tea – the tea is yummy and there is a little quote on each tea bag.  My favorite flavor is Women’s Raspberry Leaf – they have several choices for women.

Baby Songs & Games

Sometimes I rationalize all the bruises on my kids legs by taking it as a sign that I’m not being overbearing or overly protective.  But what about me?  This week I got kicked (really hard) in the shin by a pair of plastic roller-skates (I needed to head to the freezer for Poo-bear) and then wacked in the nose by my two-year-old’s head – OUCH.  I was seeing stars and imaging how I would explain to the doctor that she broke my nose… 



Any time we have a really fun family moment when all five of us are truly engaged and playing together is the best. This Sunday that happened at the pool. The girls both love to swim and now my little guy is getting into the splashing around also.  It’s getting me really excited for summer.
