School Snacks

This episode was a favorite – although it’s all about spring break snacks – they’re just as good now that school is back in session. Enjoy.

Main Ingredients:

Fruit, bread, cream cheese.


RECIPE 

Veggie Burger Delight

 

This is a favorite weeknight dinner – use whatever brand veggie burger and bread you like. We like Morningstar or Gardenburger brands.

- veggie burger
- whole wheat flat bagel
- Colby jack cheese
- lettuce, tomato, red onion
- dijon mustard
- 1/2 avocado, mashed

Toast bagel. Meanwhile cook burger according to package. Top with fixings. I love this dish with kosher pickles, lime Tostitos and a blackberry Izze.   

Focus Food: Veggie burger

While I love a real beef burger – for ease and better cholesterol, veggie burgers are a good weeknight option.

Now that the kids are back in school gross motor activity is key!  Whether you have a little space or a lot, a big trampoline or a little one can go a long way in terms of tiring out the little tikes out before bedtime.

I said to my husband the other day, I need to tone it down a bit. I get so frustrated when my 4 year old just grabs something from my 2 year old or when one of the kids shoves or screams at another.  What I realized though was in my anger I was yelling “ENOUGH!” a bit too loudly myself. This wasn’t the behavior I wanted to model or seek from them. So, I vowed to think of my daughter’s teachers, Adrienne and Andrea, who were the pinnacle of calm, and have tried to keep things a bit more zen around the house.  It’s a lot of effort & requires immense patience but seems to be working. 

 

Peak

Seeing the girls get ready for school and their excitement about going was a huge highlight this week. They are so cute with their frog and monkey backpacks which are almost bigger than they are.  The best part is the hugs and “I missed you” comments after pick-up. Just precious.
