Happy Hummus

 

 

Non-Traditional Tabouli using Quinoa

Main Ingredients: Quinoa, zucchini, red pepper, red onion.

Green Olive Hummus

1 can garbanzo beans, rinsed and drained
1/3 cup tahini
1 lemon juiced, plus some rind
1 teaspoon sea salt
2-3 cloves garlic
1-2 tablespoon olive oil
6-8 large green olives
handful parsley or clinatro (or both)

Put all in cuisinart. Blend till smooth. Serve with raw veggies.
