RECIPE

Super-Woman Salad

Can’t get your kids to eat salad – try this similar side – watch below:

Main Ingredients:

Spinach, pears & pecans.

RECIPE

Sauteed baby spinach

Apple
- 3-4 cloves garlic sliced
- half package baby spinach
- 1/4 c chopped walnuts
- olive oil
- sea salt

Heat pan to medium heat. Sautee garlic in olive oil for 30 seconds or until fragrant, add spinach and walnuts. Cook until wilted stirring often. Add salt to taste. Serve immediately.

Focus Food: Spinach

Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or blanched. It is a rich source of vitamin A (good for vision) and iron (helps carry oxygen to blood cells.)

Shopping Bag

Products

When on a road trip, a few of my favorite pass-times (in addition to eye-spy, lots of singing and reading) are: aquadoodle, sewing toys, and  a pill box full of different items (e.g. Cheerios, raisins, nuts, etc.).

Shots. There’s the stress of knowing they’re going to get them, the moment of pain and the ensuing fever and crankiness.  My four-year-old had three this week and when I told her she didn’t have to get anther one until she was five, she said, “No Mommy, I don’t want another one until I’m 100.”  Noted.

Easter with the cousins was just awesome. Lots of egg hunts, on the beach, in the grass and in the house.  I feel like my kids get such a sense of belonging by being with family and they all have so many laughts – such joy!
