Main Ingredients: Fruit, Cream Cheese, Bread

Pesto “Green Sauce”

Main Ingredients:
Basil, Olive Oil, Garlic, Lemon Juice

Non-Traditional Tabouli using Quinoa

Main Ingredients: Quinoa, zucchini, red pepper, red onion.


Simple Salad

Main Ingredients:

Baby greens, walnuts, dried cranberries, feta.


Fun Feta Pita

Main Ingredients:

Pita pocket, cucumber, feta.



1 hothouse cucumber, cubed
2 medium tomatoes, cubed
1 yellow or orange pepper, diced (optional)
1/2 red or yellow onion, diced
1 clove garlic, minced
1 ear corn, cooked or raw, cut kernels off
bunch cilantro, chopped (you can omit this or substitute with parsley)
1 avocado, cubed
1/2 lemon or lime, juiced
1-2 small 8oz cans spicy V8 (optional)
Salt & Pepper

Mix all ingredients, put half in blender with enough water or tomato juice to just cover the veggies. Blend. Remix with other half for chunky gaspacho or blend all for a smoother textured soup.

Chill and serve cold or at room temperature with sliced avocado or cilantro sprig on top.

Try adding sliced cucumber to a glass of ice water to feel like you’re having a spa moment at home.
